I got home rather late from work tonight and couldn’t face cooking for just myself, my husband is at a yoga class. I almost just grabbed some ice cream from the freezer and started on that and then I had an attack of conscience and decided I should eat some decent food!
So, I’m feeling quite proud of myself for whipping up this quick and healthy meal! I started by cooking some quinoa and then fried some mushrooms and salmon in coconut oil, and I threw in some spinach at the last minute. I mixed my quinoa with a spoonful of sun dried tomato pesto. This was actually really tasty and I’m glad I didn’t just binge on rubbish!
