Baby’s Spinach and Carrot Frittatas

Hot damn these are tasty! But they’re not for me….they’re for the baby! Who definitely agrees. Today is the first day he actually entertained eating any food at breakfast time, usually he sings to his food for a little while before throwing it on the floor!

Ingredients:

  • 8 large eggs
  • 3 large balls of frozen spinach
  • 2 small carrots (approx 135g)
  • 80g cheddar cheese
  • 1tsp chopped basil
  • Pinch of Salt
  • Sprinkling of ground black pepper

Method:

  • Preheat the oven to 180 degrees C
  • Pour freshly boiled water over the spinach and leave to defrost
  • Chop the carrots into small pieces (I used my food processor for this) and then steam them until soft (I did them in the microwave for 2 minutes)
  • Grate the cheese and set aside
  • Drain the spinach in sieve and squeeze out the water
  • Beat the eggs in a large bowl with the salt, pepper and basil 
  • Add the spinach, carrots and cheese and mix together
  • Using a ladle pour the mixture into a muffin tin, it should make 6 large muffins

 

  • Bake for approx 20 minutes, until a skewer comes out clean

 
Now your baby (and you) can enjoy them!
