We have an abundance of blackberries in our garden so I decided to make some jam! Mmm. I wanted sugar free jam so I went in search of an easy recipe and found a sugar free blackberry jam recipe on a blog via Pinterest (you’ve got to love Pinterest!).
Here is my harvested crop, ready to wash before jam making commences!
The recipe is really simple;
2 cups of fruit
3 tablespoons of raw honey (I buy my honey here)
2-3 tablespoons of chia seeds
I had a lot of berries so I had to double this recipe.
I put everything in my food processor…
…and blended it for a couple of minutes before dispensing into jars.
Then just put the jam in the fridge overnight to set. The chia seeds will swell and gel the fruit together.
The jam tastes lovely and it’s even better knowing it’s not full of sugar! It doesn’t last terribly long though, around a week so keep it in your fridge and eat it up quickly! (Like you needed an excuse!).
