I got home late tonight as I had a chiropractic treatment from my lovely sister (pregnancy sometimes hurts!).
My husband is out and I was feeling too lazy to cook so I grabbed some leftover Quinoa (from last nights dinner) out of the fridge. I chopped up and mixed in some sun dried tomatoes and warmed it up and then stirred in some feta cheese, spinach and watercress.
For a quick lazy meal it was lovely!
