I love pesto, like can’t get enough of It love it! I eat it with everything… It’s my go to for pasta, I mix it with olive oil for a salad dressing, I even spread it on my bread when I’m making a sandwich!
I decided to experiment and make a slightly different style pesto and at the same time use up some macadamia nuts I’ve had in the cupboard for a while.
- 125g macadamia nuts
- 2 handfuls of fresh basil
- 3-4 tbs olive oil
- 1 garlic clove
- Pinch sea salt
Simply place all the ingredients into a food processor and blend until you reach your desired consistency.
I used my pesto on a veggie stir fry with spiralized courgettes for dinner one night and stirred it through brown rice pasta for dinner the next. And I’ve mixed a couple of teaspoons with olive oil and dressed some raw broccoli to soak overnight or my salad tomorrow lunch, I can’t wait! Yum.
