So it’s pancake day! But most Saturday’s are pancake day for me as I love a good pancake covered in fruit for breakfast. Today my husband and I have the day off as we have plans with friends so I decided we’d have pancakes for breakfast AND lunch! I know it’s naughty, but I really don’t care! ;-P
I normally make my pancakes from a recipe on the Green Goddess site but this time I just kind of made it up as I’d ran out of some ingredients.
My mixture, for two batches of pancake mixture (feeds 4) is;
3 small bananas
1.5 cups of buckwheat flour
1/4 cup coconut milk
1/2 teaspoon baking powder
2 tablespoons almond butter
I whizzed all this up in a blender and stuck it in the fridge overnight to save time this morning.
I stuck some streaky bacon in the grill (yes, I know this is rather naughty!) and started making pancakes. Just heat up your pan with some oil (coconut oil or olive oil works well) pour in some of the mix and flip after a minute or so and cook until each side is ready.
I then served them with crispy bacon and maple syrup, Canadian style! Nom.
The pancake mix itself is healthy so you could make these and serve with fruit and nuts rather than bacon!
