As my husband gave me a bit of a telling off for wasting food I saved the kale, spinach and carrot pulp from my juice this morning and saved it for dinner.
I had roughly two handfuls of pulp and planned to make some prawn cakes with them.
I chopped up some ginger, garlic and chilli and cooked my prawns in the spices and coconut oil.
I then added the whole lot to the pulp mix with half a cup of buckwheat flour and two eggs.
I mixed it all together and made cakes with them before frying them in some coconut oil for a few minutes on each side.
I then served them with a spinach salad. And they were good!! Nom.
