Whole Grain Cereal with Toasted Nuts & Goji Berries

I had a delicious mix of puffed buckwheat, puffed brown rice and puffed millet cereal with toasted nuts, goji berries and coconut milk for breakfast today. And it was lovely!

The cereal was a mix of two Amisa products, Amisa Organic Gluten Free Puffs – Buckwheat with Agave Nectar and Amisa Organic Gluten Free Puffs – Wild Berry with Agave Nectar that I bought from Tesco. It’s refreshing being able to buy a tasty cereal that I can eat (I’m gluten and dairy intolerant), most cereals I have tried aren’t very tasty and turn to mulch within seconds of pouring on milk, but these cereals don’t do that (but don’t leave them too long!).

I prepared on Sunday night by toasting a couple of large handfuls of mixed nuts (pecans, walnuts, cashews, almonds and hazelnuts) for about 8 minutes at 200°C. I then mixed in some goji berries and stored it all in a jar so I could sprinkle them on my cereal each day. The nuts really help bulk out the cereal and keep me fuller for longer and they also add a nice crunchy texture. The goji berries are a great source of essential nutrients and minerals and are very tasty!
